Based in Kochi prefecture, the Mutemuka brewery pioneered natural sake making. They use only locally grown rice which gives a unique chocolate aroma and earthy aftertaste. Mutemuka sake is dry, unpasteurised and should be drunk cool. Aged for half a year at room temperature, super high in umami, with a nutty quality of cacao and fresh hazelnuts. The rich palate is very unique with notes of jasmine rice and white radish, with an earthy, savoury taste.
Mutemuka is muroka (no charcoal filtration) nama (unpasteurised) and genshu (undiluted) resulting in a beautifully full-bodied sake. This sake has great food matching applications because of it’s unique savoury palate.
